In an effort to undo all the birthday food, I decided to make a healthy meal for dinner (once last Thursday, and again Sunday night). It is super easy and takes about 10-15 minutes to cook.
I combined an orange bell pepper, broccoli, and snow peas. Added frozen (peeled and de-veined) shrimp and topped with vinaigrette. (I used Bolthouse Farms Asian Ginger, you can get it in the produce section of the grocery store)
I cooked everything on medium high heat until the shrimp was cooked. I also cooked brown rice at the same time and served everything together.
It was quick and easy and good for me too. I hope this can undo some of the bad food I have eaten over the past few weeks.
