Corn and Black Bean Salad
- 1 cup frozen corn
- 1 can black beans
- 1 medium avocado
- 2 Tbs onion
- 2 cloves garlic
- 1/2 Tbs parsley
- salt and pepper to taste
Drain and rinse beans. Heat beans, onion, garlic on stove for about 2 minutes. Add to bowl.
Cut avocado into chunks, add to bowl with parsley, salt, and pepper.
Mix and serve.
I planned to serve it as a side with dinner, but I'm eating it for lunch now (over lettuce with some italian dressing).I think it could easily split into 4 servings. Here are the nutrition facts according to Myfitnespal.com (I did end up signing up for it, I like it so far).

Its really yummy on its own, but I could see it used for burritos, or with chicken too.

This looks delish, I've made a black bean and corn salad similar to this before, but this one looks super easy. I will definitely try it! I think I have all of those ingredients at home except the corn. I can grab some corn from my dads garden I guess :)
