mmmm

I've wanted to use up the corn in our freezer and I found a great way to do it.

Corn and Black Bean Salad


  • 1 cup frozen corn
  • 1 can black beans
  • 1 medium avocado
  • 2 Tbs onion
  • 2 cloves garlic
  • 1/2 Tbs parsley
  • salt and pepper to taste
Heat corn in a pan on the stove (to give it that 'roasted corn' look/ taste). Heat for maybe 5 minutes, put in bowl.
Drain and rinse beans. Heat beans, onion, garlic on stove for about 2 minutes. Add to bowl.
Cut avocado into chunks, add to bowl with parsley, salt, and pepper.
Mix and serve.

I planned to serve it as a side with dinner, but I'm eating it for lunch now (over lettuce with some italian dressing).I think it could easily split into 4 servings. Here are the nutrition facts according to Myfitnespal.com (I did end up signing up for it, I like it so far).

Its really yummy on its own, but I could see it used for burritos, or with chicken too.

  1. This looks delish, I've made a black bean and corn salad similar to this before, but this one looks super easy. I will definitely try it! I think I have all of those ingredients at home except the corn. I can grab some corn from my dads garden I guess :)
